A recent visit to the amazing Archie Rose Distillery in Sydney, where we had a tour of the Distillery, to see how they use the Dorrigo Pepper in making their Signature Gin.
We have been providing Dorrigo Pepper leaves to Archie Rose Distillery for 8 years now. so great to finally see the distilling action using Dorrigo Pepper.
Dorrigo pepper branches cut to harvest leaves for drying. Branches are stripped of leaves by hand and leaves put into a dehydrator for drying. Stripped branches are not wasted... the are used for smoking olives with the Dorrigo pepper wood or mulched into the garden.
The 2025 season of Dorrigo Pepper Berry picking has finished. All Berries have been sorted, taking off stalks and removing bugs then dehydrated, with a good amount of stock now available
Pepper Berries are on the trees and ready for harvesting, during the berry season March to May.
